Meal Planning for the weekend.

Hoping the hubs is home to enjoy the dinner I’m planning this weekend. I’ve made this before and it’s a big hit.

This recipe was adapted from but I put my own twist to it


Cinnamon Chili Pork Tenderloin with Apple Salsa. Can we say yummy? It was even better the next day for left overs! I added about 3 tbs of honey to the pork to make a nice glaze and baked it at 350 for 20 min per pound. The apple salsa is sooooo good! But not kid friendly…atleast not for my kids. Very easy but makes a nice presentation for a dinner party.

Cinnamon Chili Rubbed Pork Tenderloin with Apple Salsa

3 tablespoons olive oil

3 garlic cloves, minced

1 tablespoon chili powder

½ tablespoon ground cinnamon

1 pork tenderloin

Salt and pepper to taste

Apple Salsa


For Salsa:

2 cups diced Fuji apple, about 2 medium apples

1/2 cup diced red bell pepper

1/3 cup fresh lime juice

1/4 cup diced red onion

1/4 cup minced fresh cilantro

1 tablespoon honey

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper


Combine all ingredients, stirring well.
